A healthy version of egg fried rice. Hope you like it :)
Ingredients:
1 cup quinoa
Ghee
Spinach
3 pods of mushrooms
7-8 cloves of garlic
1 onion
2 tomatoes
1 egg
Coriander leaves
Chilli powder
Chicken masala
Curry masala
Salt as per taste

PROCEDURE:
1. Take 1 cup of quinoa, 2 cups of water, 1tsp ghee and salt as per taste in a container and put it on boil for sometime on the flame.
2. Clean and chop all the vegetables.
3. After that on a pan, put 2 tsps of ghee and sauté the mincely chopped garlic and finely chopped onions and mushrooms until golden brown.
4. Take this aside in a bowl. Add 1tsp ghee to the pan and add the spinach. Let it soak the ghee and then add little water to let it cook.
5. Add tomatoes to it and keep cooking it till a thick paste.
6.Add all the vegetables together and mix well. Break 1egg and onto that.
7. Keep mixing to scramble the egg.
**If you are not sure of the egg cooking well this way you can scramble it separately as well.
8. Move aside the mixture on the pan and add the quinoa along with it. Mix well and add some ghee along with 1tsp of chilli powder, 1 tsp curry masala and 1½ tsp of chicken masala along with salt as per taste. Mix well.
9. Serve with any dip and garnish with coriander leaves. I suggest a chaser salad dressing along with, you can try your own dip as well and let me know.
